tip: in the 1st week when brushing with e.g. b. linens culture (hydrogenated in 8% brine) use the soft oxhair brush.
then use the harder cheese washing brush with fiber bristles to lightly brush the upper side of the cheese with fresh water.
this creates a nice layer of smear that also protects the cheese from unwanted mold.
the lower side of the cheese that is on the board always stays nice and dry and does not stick.
